We used to go camping a couple times a summer with our good friend Paul, and later on with his fiance Jess. And it was fun. Matt went last fall for a day with two neighborhood guys and all the younger boys, but I haven't been in NC. I would rather camp on the beach, but the intercoastal can be pretty expensive to take the boat and at $4.00 a gallon it isn't worth it right now.
So I would love some easy camping recipes/food ideas. We will have a fire pit so I was thinking of foil pockets and taking our pudgy pie maker and doing pizzas and grilled cheese. Of course there is always hot dogs too. Us Jacobs' are not going for the "campers of the year award" that is for sure.
I'm sure it will be fun. Kerr Lake is in both NC and Virginia so it should be pretty cool zipping across state lines in the boat. (Can you tell I am hyping myself up?)

We do hobo dinners in foil packets. Patty up some burgers and season them Put them in the foil then add baby carrots, onions, potatoes (we like asparagus) and a little cheese...put them on the fire for 20-30 minutes and YUMMO!
We do apple slices with raisins and cinnamon and a little butter the same way...these take a little while start them right after supper and they are a yummy night snack.

We used to go camping all the time when I was little - I loved it. Now...not so much LOL
I remember doing hobo dinners as well. Except for we had chicken breast, veggies and seasonings (Honey BBQ Sauce was great) in there - it was YUMMY!
